Baked Parmesan Tomatoes
TIP: I used a cupcake tin to hold the tomatoes together while baking!
Ingredients
- 4 tomatoes, halved horizontally
- 1/4 cup Parmesan cheese
- 1 teaspoon chopped fresh oregano
- 1 teaspoon garlic powder
- 1/4 teaspoon salt
- Freshly ground pepper, to taste
- 4 teaspoons extra-virgin olive oil
Preparation
- Preheat oven to 450° F.
- Place tomatoes cut-side up on a baking sheet. Top with Parmesan, oregano, salt and pepper. Drizzle with oil and bake until the tomatoes are tender, about 15 minutes.
~ 62 calories per half tomato.

2.40 miles!!!
Ran at the park today! I started out walking the first time around to see how long the trail is- it’s so close to a mile, .83miles. Second lap around I walked/ran the second half. Third time around I pretty much ran the whole trail! Each time I got to the beginning I stopped at my car and chugged some water.
I forgot to check what time I started at! Oops! I got to the park around 6:00 and left around 6:35. I am so happy I ran outside today! The day started off to gross, super downpour and such but now its nice & sunny out!
The first picture is of the trail. You can see the little yellow guy I get to follow lol
The second one is the view at the top!! After my three laps I go & sit down, stretch & drink my liter of water down!
I have yet to run outside because its been raining like a mofo few the past few days. BUT! I drove through my towns park today & they have a walking trail!! Its the same path the cars take to drive around the park, but still!! I’ve been to the park before I just couldn’t remember how hilly it was, and its not that bad at all. I’m super happy about this! The trail is maybe 1/2 a mile long, but the sites you get to run with are amazzzing! I’ll have to post some pictures when I go for a walk/run tomorrow.
I’ve never worked out outside before…this should be interesting..
I checked my weight last week & I keep maintaining, which I’m totally happy about! I know if I workout 5 to 6 days a week I could lose a few more pounds. I also have to keep an eye on what I eat, but I’ve been getting much better at staying on track, curving a little here & there but otherwise I’m staying strong!

My husband got me a Fitbit for my birthday, which is today. I wore it starting at 11am, now it’s 4:52 pm.

Now for calories burned they say its an estimate, although you do enter your height & weight & age onto the website. The active score is, I don’t know what that is other than saying you need to stay moving.
They do have an eating plan on the site as well. I said I wnated to lose 5 pounds. The website then gave me options of how strict a meal plan I would want, .5lb to 2lbs lost in 1 week. I chose the 1lb lost in a week, restricting 500 calories. It doesn’t give you foods to eat, it just tells you how many calories you can eat throughout the day, if you log in the food you eat.
Just within the 5 hours I’ve used it, I really love it. It’s not about losing weight, although it is helpful, I like that it’s more about staying active!
I definitely recommend it!
Bought some Coconut Milk Vanilla, going to give that a try on some cereal.

Now I am a waitress & I’m on my feet for 5+hrs Monday to Friday non stop moving most of the time. I like to reward myself with basically cake after my morning shift 6am-11am on Thursdays, I know its terrible, but I always workout when I get home. I make sure I burn the pancakes off…ugh who am I kidding! I have to get in the habit of eating better..for my health!!
Okay off to do a 30 minute run! See ya on the other side!!
